Mexican Casserole

I really need to get back into the habit of cooking more for my family.  For some reason I've gotten into a bad habit of quick fixes and fast food.  (shame shame, I know!!)  I like to cook -- I really do its just being a working mom, by the time I get home, kid stuff -- house stuff -- blog stuff -- yada yada ...you know the drill!!  Soooo....I've been paying a little more attention to some of my favorite sites which posts weekly menus -- like Sister's Stuff.  As I was browsing this fabulous site I ran across this yummy recipe and knew I had to try it.  Aren't you proud of me??  LOL I'm such a loser sometimes.  


Anyhoo's -- give it a try.  It's DELICIOUS and it has my family's two thumbs up approval.




Fast and easy!  My style of cooking for sure.  


I added a few ingredients to this recipe -- but if you'd like to see the original recipe just click here.


Mexican Casserole


1 lb. cooked ground beef
1/2 chopped onion
1 tsp. minced garlic (I use the minced garlic in the jar)
1 lb. grated cheese
1 can refried beans
1 can enchilada sauce (always use Rosarita brand)
4 fajita size flour tortilla's (torn into pieces)


Grease dish. Put 2 tortilla's on bottom, add a layer of refried beans, ground beef, cheese and half of the enchilada sauce.  Repeat layers again but I chose to top with the cheese.  Bake uncovered.


Bake at 350 for 40 minutes.

4th of July Home Decor - Video #169

I have been totally inspired to make some home decor firecrackers because I've been seeing them all over the web. They are created using all sorts of materials and it's very interesting to see how creative we all are.  Kudos everyone!!


Now....when I first started my project I had in my mind what I wanted them to "look like" and now that I am finished ---- hmm...they turned out a little (well......a lot) different from what I first thought -- BUT I'm okay with it and I think they are kinda puuurrrty :)

4th of July Parade Scrapbook Page & Video #168

4th of July Parades (like this one) are really popular in my community -- it brings everyone out (no matter the age).... to support the community by joining in the parade with old cars, farm equipment, homemade floats, kids dressed up, marching kazoo bands, trail riders and lots more. Lots of areas have bar-b-que luncheons or dinners along with afternoons filled with fun and games. The evening finishes off with a fireworks event in some areas.


I thought I'd make a scrapbook page to remember the event this year. Digital Delights by Louby Loo's USA Myrtle the Turtle is perfect for this project as she is proudly holding her flag and is so excited to adorn my page.





I used my copic markers to color Ms. Myrtle but you can purchase the colored version here.

Minnesota State Float for 5th Grade!

Lucky me.....my nephew asked me to help him with a 5th grade project to create a State Float for his Social Studies class.  Each student gets a choice of "state" and he chose Minnesota because he thought it would be interesting to learn about the state.  How fun!  (side note ---- I vaguely remember when my oldest son did this project when he was in 5th grade too (I think we had Arkansas though).  Anyhoo's -- in Social Studies the 5th graders had to choose a state and create a float to learn all about it.  Great concept! Then during school they have a parade to "show" off their float and have a fun time looking at everyones.
